Dedicated facility versus careful shared kitchen
A dedicated gluten-free facility controls risks differently from a conventional pizzeria using separate pans and tools. A shared kitchen may take meaningful precautions yet still contain airborne wheat flour and common ovens. The appropriate choice depends on the diner’s medical guidance and risk tolerance.
Why old reviews are weak evidence
Ingredients, crust suppliers, staff training and kitchen procedures can change. A review from two years ago describing a separate cutter does not confirm today’s practice. Ask the current shift and, when possible, request that the order be clearly labelled.
