State the allergen and seriousness
Use the specific ingredient name and explain that the request concerns an allergy, not a preference. Avoid vague phrases such as “no dairy” if milk protein is the concern.
Ask about shared surfaces and tools
Dough benches, pans, peels, ovens, fryers, cutters and gloves can transfer ingredients. Ask what the restaurant actually does during preparation.
Check sauces and processed toppings
Pesto may contain nuts and cheese; meat products and plant-based substitutes can contain unexpected ingredients. Suppliers can change.
Be careful with substitutions
Removing cheese does not make every pizza dairy-free if the dough, sauce, garlic finish or equipment presents a problem.
Know when not to order
A restaurant that cannot answer clearly may be honest about its limits. Choose another option rather than asking staff to guarantee zero risk in an uncontrolled kitchen.
Write down the answer
For a serious allergy, note who answered, what procedures were described and whether the order was labelled. This does not create a guarantee, but it reduces misunderstandings and helps you make a consistent decision.
