Vegetarian pizza can be much more than removing meat, and vegan pizza can work without imitating every dairy ingredient. Good ordering focuses on flavour structure and accurate ingredient information.

Build around roasted flavour

Mushrooms, onions, peppers, eggplant and squash gain concentration when roasted. Raw piles of vegetables can waterlog the crust.

Add salt and acidity

Olives, capers, pickled peppers, tomato and tangy cheeses prevent vegetable pizzas from tasting flat.

Use herbs and finishing oils

Basil, rosemary, oregano, garlic oil or chili oil can add aroma without adding much weight.

Verify hidden animal ingredients

Some pestos, cheeses, sauces and dough conditioners may not meet a diner’s definition of vegetarian or vegan. Ask the restaurant.
