Food Safety for Pizza Leftovers

Use official Canadian and U.S. guidance for refrigerating, storing and reheating pizza leftovers safely.

Pizza can contain cheese, meat and cooked vegetables that require the same time-and-temperature care as other perishable leftovers. Appearance and smell cannot reliably prove that food is safe.

Follow the two-hour rule

Health Canada advises refrigerating or freezing leftovers within two hours. The USDA advises one hour when the surrounding temperature is above 32°C (90°F).

Keep cold food cold

Refrigerate at 4°C (40°F) or below. Divide large quantities into shallow containers so they cool more quickly.

Use refrigerated leftovers promptly

Health Canada recommends eating refrigerated leftovers within two to three days or freezing them for later.

Reheat thoroughly

Health Canada and the USDA recommend reheating leftovers to an internal temperature of 74°C (165°F). Check the thickest part of a deep or heavily topped slice.

When in doubt, discard

Do not taste questionable pizza to decide whether it is safe. Extra caution is appropriate for young children, older adults, pregnant people and anyone with a weakened immune system.

Pizza-specific risks are not visible

A cheese pizza may look dry and harmless, but dairy and cooked toppings are perishable. Meat, vegetables and sauce can also retain moisture in the centre. Do not use crust crispness or the absence of an unpleasant smell as proof of safety.

Use a thermometer on thick pizza

For deep dish, stuffed or heavily topped slices, insert a clean food thermometer into the centre without touching the hot pan. Thin pizza heats quickly, but thick fillings can remain cool while the surface bubbles.
